Spaetzle

Spaetzle are Swabian pasta in an elongated shape, served as a side dish or with other components as a separate dish.

The secret of the deep golden yellow noodles: Many egg yolks are to be used. The traditional Swabian way of making them is to scrape them from a kitchen board into boiling water. Also, there are special Spaetzle squeezer which make it easier to have the perfect conistency and shape.

There is a saying that goes like "With Spaetzle and sauce, you'll get big and strong!" that Swabian Grandmas use to say to their grandchildren. Maybe that's the reason why the dish is considered a "national treasure"...
