Schupfnudeln

Invented in the Thirty Years' War as an emergency food, Schupfnudeln (literally "rolled noodles" in local dialect) are still very popular today. Whether sweet or salty.

The secret of the Schupfnudeln dough is to use potatoes which make it yellow and soft. Similar to pasta, the noodles have to be cooked in boiling water. Traditionally, Schupfnudeln are served with either Sauerkraut, a dark sauce, bacon and onions (salty variant) or sugar and cinnamon (sweet).
